Mexican Beef Bowls

From the Fit Kidz Kitchen – Mexican Beef Bowls

Makes 6-9 serves

INGREDIENTS:

500g Beef Mince

1 tin Kidney Beans

1 tin Crushed Tomatoes

1 pkt Taco Seasoning

2 cups Grated Cheese

3 cups Brown Rice

1 tbsp Oil

Salt & Pepper

1 tub Sour Cream

Half Onion

2 Celery Stalks

2 Avocados

1 tsp Lemon Juice or Half Lemon

Iceberg Lettuce

1 punnet Cherry Tomatoes

2 cloves Garlic

METHOD:

  1. Wash rice and cook as instructed on the packet
  2. Wash all vegetables
  3. Dice onion and celery
  4. Crush garlic
  5. Cut cherry tomatoes into quarters
  6. Shred lettuce
  7. Remove flesh from both avocados and mash
  8. Squeeze lemon juice into avocado mash and mix well
  9. Add salt and pepper to taste and chill in the fridge
  10. In a frying pan with a small amount of oil, cook onion and celery, once soft add garlic and taco seasoning
  11. Add mince to frying pan and cook through
  12. Drain and rinse kidney beans while mince is cooking
  13. Once mince is cooked, add tin of tomatoes and beans then lower heat to a simmer

TO PLATE:

  1. Plate cooked rice and add mince mixture on top
  2. Add grated cheese on top
  3. Add your sides of lettuce, chopped tomatoes, sour cream and avocados
  4. ENJOY!
